It is Saturday morning and I have my sister over! I love it when we can spend time together. Last night she asked for waffles for breakfast. Yum! I can’t say no to that So I ran and grabbed a low calorie recipe and tricked her into eating healthy this morning! Even from the pickiest eater, these pancakes got 2 thumbs up!
Recipe adapted from WW cookbook.
1 1/2 cups all-purpose flour
3/4 teaspoon baking soad
1/2 teaspoon salt
3 large eggs, separated
1 tablespoon sugar
1 3/4 cups low-fat buttermilk
1 tablespoon unsalted butter, melted
- Combine dry ingredients (flour, baking soda, salt). In another medium bowl combine egg yolks and sugar until well combined. Stir in the buttermilk and melted butter. Stir into the flour mixture until well combined. In a clean medium bowl, beat the egg whites with an electric mixer to stiff peaks. Gently fold the whites into the flour mixture.
- Coat a nonstick griddle with non-stick spray over medium heat. Spoon in about 1/4 cup of the batter and cook until tops are covered with bubbles about 3-4 minutes. Turn and cook until lightly golden.

I used my kitchen aid to combine the batter and used a hand blender to beat the egg whites. I tried to just wisk the eggs by hands but that was very labor intensive and the hand blender was way better!
I had 2 buttermilk pancakes, 3 scrambled egg whites and two turkey sausage links for 267 calories!
